Our Favorite Keyboard Shortcuts:

Using keyboard shortcuts is a great way to save time at your computer. They do the exact same thing as items on the tool bar, only faster. They work in most applications, in both Windows and Mac, and they work while navigating through the contents of folders where appropriate (like selecting and copying folder contents).

To use these basic shortcuts in Windows, hold down the "control" key and the letter associated with the action you want to take. For Macs hold down the "command" key (with the apple on it), and the letter associated with the action.

O - Open a Document
S - Save a Document
N - New Document or Window
A - Select All Contents
C - Copy
X - Cut
V - Paste
P - Print
Z- Undo Last Action
F - Find a Word

Recycling Electronic Equipment

Computers, monitors, terminals, printed circuit boards, telephone equipment, TVs, VCRs and communication systems that are unusable can be disassembled into component parts.  These parts can be sold for reuse or sent to certified facilities for metals recovery.  Before you take that old computer to your local dump, be sure to research electronic recycling facilities in your area.

Recipe of the Month

Chicken Cordon Bleu

  • 6 skinless, boneless chicken breast halves
  • 6 slices Swiss cheese
  • 6 slices ham
  • ½ cup bread crumbs
  • 2 cloves of garlic, minced
  • 1 egg
  • 1 tsp Dijon mustard
  • 1 teaspoon paprika
  • 6 tablespoons butter
  • ½ cup dry white wine
  • 1 teaspoon chicken bouillon granules
  • 1 tablespoon cornstarch
  • 1 cup heavy whipping cream

Directions

1.     Preheat oven to 350

2.     Pound chicken breasts to about half inch thickness. Wrap each piece of cheese witch ham to keep it from melting out and place it on each breast within ¼ inch of the edges. Roll the chicken and ham into a pinwheel shape and secure with toothpicks or string that does not melt.

3.     Mix the bread crumbs and mustard in a small bowl, and coat the chicken pieces. Then coat with bread crumbs.

4.     Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Remove from pan to a baking dish.

5.     Add the wine, paprika, garlic, and bouillon to skillet. Reduce heat to low, cover, and simmer for 5 minutes. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet and bring to a boil. Meanwhile finish cooking the chicken, about ten minutes

6.     Remove the chicken from the oven Divide cream mixture in half. Use half to coat the bottom of the chicken pieces and drizzle the other half on the top. Garnish with fresh basil if desired.
